rice dish


This is a real simple rice dish full of protein. Start by boiling 2 1/2 cups of water. Once boiling, add 1 cup of rice. Turn the heat down and let the rice simmer for about 45 minutes (until rice is tender and edible).

In this example, 2 diced potatoes, 2 red peppers and 5 diced carrots were sauteed in olive oil. Saute until carrots and potatoes are tender and edible (20-30 minutes). You can saute any vegetable you like, such as onions, sweet potatoes, mushrooms, etc.

Add the vegetables and rice together and you are done. Makes about 5 servings.
